Did you ever wonder what kind of chili peppers are in the shakers that you see on the table at pizza places? Well it turns out that it's mostly cayenne but each brand has their own blend. Most of those are pretty bland and not very hot. At least not really hot enough for me. So in comes the arbol chili. The unsung spicy hero of many mexican dishes. Its about 5 to 10 times hotter than that old shaker chili. This is an earthy, smokey dried pepper that I smoked to... well, because I wanted some smoke in my flakes I guess.
